The event
This presentation will explore a transformative food safety journey leading to current understandings and approaches to microbial pathogen controls in food processing environments. From critical use of water to today’s appreciation for biofilm as the root cause in many quality and food safety challenges, lessons learned from this one journey spurred research and development, including in our own laboratories, of improved tools and approaches for environmental hygiene controls.
